Sébastien Crison perpetuates the Scribe’s grand gastronomic tradition with his virtuoso know-how, love and knowledge of foods, mastery of the subtleties of cooking methods and techniques, and attention to detail. His cuisine is complex and meticulous, involving multiple cookings.
But Chef Crison is also forward-looking, curious and open-minded, passionate about travel and new discoveries. His deep love of Brittany finds expression in dishes that combine foods from land and sea while more distant and exotic influences emerge in his fusion creations.
